Hi.

My name is Lee, welcome to my pages. I hope we can have fun together?

When I’m not developing recipes for others, writing guest blogs, writing my own blog, or even trying to learn how to paint, I’m usually spending time with the amazing Mr G (my husband) or with my lovely daughter or my lovely son (very proud mum).

What is this all about? Great question. This site is about real cooking and baking, real recipes and real mistakes.

No filters here, (although i’d love to find a filter that can take ten years worth of laugh lines away. Just me, whats happening, and whatever cameras or phone i have to hand .

There are many things that get under my bonnet and wiggle around, one of those is food waste. If i buy ingredients specifically for a recipe, and i only need a small amount of the ingredients, i want to be able to use the rest up and not have to throw them away. My mum used to say , “Waste not Want not” is that still a saying ?

For me, waste is not just about using up all the ingredients. What about leftover food? If i’m able , i hope to give ideas as to how to use up any leftovers too.

Maple Syrup Sausages in Bacon

Not so much a recipe as an alternative way to pimp up these small bites of Christmas side dish

I think i’m probably correct in saying that in my house anyway, mini sausages wrapped in bacon only hit the table at this time of the year, and when they do, they sometimes don’t even make it into a serving dish.

Once out of the oven, they’re stolen by my son and the lovely Mr G even before they have a chance to cool enough to be an acceptable mouth temperature. I can never seems to make enough so i have been known to hide them so i have a chance to partake. Only fair!

Once the bacon is wrapped around the sausage, apart from drizzling something over them, there’s nothing else to do other than cook.

Why make life more difficult for myself when i’ve not even bought the Christmas pressies yet!

What You Need

  • Mini Sausage (How many is up to you) - See Tip Box

  • Streaky Bacon ( How many slices is up to you) - See Tip Box

  • Maple syrup (How much is up to you) - See Tip Box

  • Spring onions - Chopped finely - Optional

How It’s Done

Heat oven to 180c

  • Lay the slices of bacon on a chopping board, and run the blunt side of the knife along the slice so that is stretches.

  • Cut the stretched slice of bacon in half

  • Wrap one of the pieces of bacon around one of the mini sausages

  • Lay the wrapped sausages into an oven proof dish.

  • Drizzle over maple syrup making sure each sausage has some.

  • Place the dish into the hot oven and cook until the bacon is crisp and the sausages are piping how all the way through

  • Lay the cooked sausages onto paper towels to soak up any excess fat that may be on the bottom of the sausages,

  • Transfer to a serving dish and if using, sprinkle over the chopped spring onions ad drizzle over a little more maple syrup

  • Serve hot or at room temperature.

Tip Box

  • Sausages - How many mini sausages you need depends on how many people you are serving.

  • Bacon- How many slices of bacon needed depends on how many sausages you are cooking. One slice will wrap two sausages.

  • Maple Syrup - How much maple syrup needed depends on how sweet you like it. If you done want the sauuasages too sweet, leave off the extra drizzle when serving them
