Hi.

My name is Lee, welcome to my pages. I hope we can have fun together?

When I’m not developing recipes for others, writing guest blogs, writing my own blog, or even trying to learn how to paint, I’m usually spending time with the amazing Mr G (my husband) or with my lovely daughter or my lovely son (very proud mum).

What is this all about? Great question. This site is about real cooking and baking, real recipes and real mistakes.

No filters here, (although i’d love to find a filter that can take ten years worth of laugh lines away. Just me, whats happening, and whatever cameras or phone i have to hand .

There are many things that get under my bonnet and wiggle around, one of those is food waste. If i buy ingredients specifically for a recipe, and i only need a small amount of the ingredients, i want to be able to use the rest up and not have to throw them away. My mum used to say , “Waste not Want not” is that still a saying ?

For me, waste is not just about using up all the ingredients. What about leftover food? If i’m able , i hope to give ideas as to how to use up any leftovers too.

Mini Pear and Chutney Bites

Mini Pear and Chutney Bites

So easy to make and with minimal ingredients, these are perfect for any get together.

They take moments to put together and can be adapted to use any delicious chutney that I can get my hands on.

 I love the fact that I can adapt the bites to what I have in my pantry and as someone who always seems to have some ready rolled puff pastry in my fridge of freezer,  t’s a no brainer.

 What You Need

  •  1 Pack of Ready Rolled Puff Pastry

  • 1 Jar of Spiced Chutney – See Tip Box

  • 4 Ripe Pears – See Tip Box

  • 1 Egg – Cracked into a small bowl and beaten with a fork for an egg wash

Cut into equal pieces

 How It’s Done

  •  Heat the oven to 180c

  • Keep the skin on the pear and core and thinly slice the pear. Set it aside until needed.

  • Open up the ready rolled puff pastry and roll out our flat

  • Cut the pastry into equal squares by first cutting it in half both lengthways and width ways, then in half again, then in half again until there are about 35 pieces. Set it aside until needed.

  • Put a dollop of the chutney on a piece of non-stick baking parchment or on a silicone mat.

  • Lay two or three slices of the pear on top of the chutney.

  • Lay a piece of the puff pastry on top of the pear and give it a gentle push down to attach it a little.

Layer up everything Chutney and slices of pear

  • Repeat with until all the ingredients are used up.

  • Brush the tops of the pastry with a little of the egg wash.

  • Place the tray into the hot oven and bake until the tops are a golden brown.

  • Remove from the oven and let cool for a few minutes before removing them.

  • Eat at room temperature and store in an air tight container in the fridge for a few days.

Tip Box

  •  Spice Chutney – I got my hand on a jar or apple a pear spiced chutney, but don’t limit yourself to that. On the many other occasions I’ve made these bites, I’ve used a jar of red onion chutney and other fruity chutneys. The only thing I would recommend is to stay away from anything picked. Not a great match with the pears.

  • Pears – Choose a pear that is ripe but not over ripe, the type of pear is up to you.
