My name is Lee, welcome to my pages. I hope we can have fun together?
When I’m not developing recipes for others, writing guest blogs, writing my own blog, or even trying to learn how to paint, I’m usually spending time with the amazing Mr G (my husband) or with my lovely daughter or my lovely son (very proud mum).
What is this all about? Great question. This site is about real cooking and baking, real recipes and real mistakes.
No filters here, (although i’d love to find a filter that can take ten years worth of laugh lines away. Just me, whats happening, and whatever cameras or phone i have to hand .
There are many things that get under my bonnet and wiggle around, one of those is food waste. If i buy ingredients specifically for a recipe, and i only need a small amount of the ingredients, i want to be able to use the rest up and not have to throw them away. My mum used to say , “Waste not Want not” is that still a saying ?
For me, waste is not just about using up all the ingredients. What about leftover food? If i’m able , i hope to give ideas as to how to use up any leftovers too.
Be Brave
Cooking isn’t hard , neither is baking, its all about being brave and being ok with making mistakes
Sun Blushed Tomato Tapenade & Walnut & Olive Pesto? Got to love a few side dishes when it’s eating outside time, right? I’m a sucker for homemade versions of a tapenade and pesto especially now I’m into growing my own herbs. The great thing about being able to throw one of these together is simply that, they’re easy to throw together and go with so many things.
Hazelnut & Herb Crusted Rack of Lamb with White Bean Cassoulet. I love lamb almost as much as i love chicken yet for some reason i eat far less of it. I suspect its because it’s a red meat and i’m trying to keep the lovely Mr G healthy, or it may just be that it’s not as cheap as chicken is.
Rhubarb, Pistachio & Honey Galette with Orange & Gin Gluten Free Pastry. If you start to make this pastry, you’ll soon find out that not only is it really easy, but it’s also a vessel for lots of different flavoured gins. Think Gin and you can think about using the flavoured gin to enhance whats inside your pastry.
Spiced Monkfish with Charred Courgette, Pickled Red Onion & Cumin Flatbread. Like fish or love fish, this is the recipe for you . Just the right amount of spice. Spice for flavour not for heat the way it should be. Eat the monkfish with the charred and blackened courgette with a hit of the sharp, acidic ,pickled red onion to counteract it all. Then wipe it all up with the fabulous cumin flatbread. Don’t waste a drop of that sauce. Once tried you’ll be adding it to your family recipe book.
Honey & Vanilla Madeleines.
What i like most about these little mouthfuls of joy, is how easy they’re to make. This has two main advantages. So easy to make that i end up making them very often to eat, but also my go to recipe for edible gifts.
Raspberry & Pistachio Meringues with Dark Chocolate Whipped Ganache
It’s easy to see why these are so popular, and no matter how tasty the meringues you normally make are, I think these pink raspberry and pistachio meringues with whipped dark chocolate ganache treats will give them a run for their money. Go on, give them a go, and enjoy your sweet life.
Raspberry & Pistachio Profiteroles.
Love them or hate them, they do have an incredibly bad reputation for being difficult to make, and they shouldn’t.
This choux pastry is one of the easiest pastries to make, very versatile and uses just a few ingredients, so I’d say that their reputation is more daunting than difficult.
One Pot Coconut Milk & Turmeric Baked Chicken Thighs with Spring Greens & Potatoes
A chicken dish that you can serve to your family and any guests. Remember the days when we could invite people to our houses to eat? This is the dish to share with your friends but don’t forget the the chunks of bread to sook up all that incredible sauce.

Clams with Prawns, Peas & Wild Garlic - Easy to cook and tasty too, and with those shells, you get to slurp up any sauce that gets caught up in them. Using this seasons wild garlic adds its unique spring flavour leaving a sauce yoi’ll want to dunk chunky bread in to . Don’t waste a drop

Baked Salted Caramel & Pecan Cheesecake, a go to dish (in some form or another) to make when I’m feeding the many.

Wild Garlic Butter - Probably one of the easiest ways to make a flavoured butter otherwise known as a compound butter. Just a chefie word for a butter with something else added such, as in this case, wild garlic. Plates by the talented Linda Bloomfield
Wild Garlic & Goat Cheese Filo Pie
I’m back to the wild garlic again for this recipe., wild garlic and goats cheese filo pie, filo pastry being one of my favourite pastries. I love the very thin crispiness of it and i especially love the buttery flavour that it holds.
Not something you’d think to make everyday, adding wild garlic and walnuts to oatcakes, but these are a little bit special, especially when you eat them with some great cheese. The easiest oat cake recipes, easy to store and freeze.
Wild garlic & bacon bread baked in a cast iron pot . I love bacon in anything, but in this bread, add it to the garlic and it has a balance of flavours that is perfect. A fool proof easy bread recipe with the perfect texture and the perfect flavour. Using foraged wild garlic and crispy bacon this bread is going to be your favourite.
Devilled eggs, such an American thing to make , but once you get your head around it, you’ll agree with me that a hard boiled egg white, is the perfect vessel for, well, most things, and definitely this easy peasy devilled egg filling.
Croatian Easter Bread - It’s a dense fruity bread filled with flavour and because it’s covered in egg yolk before baking, it goes a dark brown when it comes out of the oven. More flavour.
Easter- Coconut & Chocolate Chip Macaroon Nests . Easy cookies to make for your Easter celebrations for you and your family. Add nuts or leave them out it’s up to you, which ever you do, you wont be able to resist them so make double so that you wont run out.
